Two Light And Fluffy Frosting Recipes

Are you a fan of light, fluffy frosting on your cakes, cookies, and other desserts? The secret to such frosting is one ingredient -- liquid egg whites. You can buy liquid egg whites in cartons in specialty food stores and even in some standard grocery stores. Use them in either of these recipes to create the light, fluffy frosting you crave.

Caramel Brown Butter Frosting

This frosting tastes like decadent caramel sauce and rich brown butter all wrapped up into one. It takes a little time to make, since the browned butter needs to cool, so make sure you plan ahead.

Ingredients:

  • 1/2 cup unsalted butter
  • 3 cups powdered sugar
  • 1/4 cup liquid egg whites
  • 2 - 4 tablespoons whole milk
  • 1/8 teaspoon salt
  • 1 teaspoon caramel extract
  • 1 teaspoon vanilla extract

Melt the butter in a saucepan over medium heat. Continue heating it and stirring it until it turns a golden brown color. Then, remove the butter from the heat and place it in the refrigerator until it solidifies.

When the butter is solid, place the egg whites in a separate bowl, and beat them until they are light and fluffy. Add all of the remaining ingredients to the bowl. Start with just 2 tablespoons of milk. Mix on low to combine, and then beat for 2 minutes on medium speed. If the frosting seems a little stiff, add more milk, a little at a time.

Dutch Chocolate Frosting

You won't believe how intense the chocolate flavor of this frosting it. Using dark coffee as the liquid really brings out the chocolate flavor while adding just a slight coffee undertone.

Ingredients:

  • 1/2 cup unsalted butter
  • 2 3/4 cups powdered sugar
  • 3 tablespoons liquid egg whites
  • 1/3 cup cocoa powder
  • 2 - 4 tablespoons dark brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt

Place the butter, salt, cocoa, vanilla and powdered sugar in a bowl, and mix on low speed to combine. Add the liquid egg whites and 2 tablespoons of the coffee, and mix for 2 minutes on medium speed. The frosting should be getting just a little fluffy at this point. Add an additional tablespoon or two of coffee if you prefer a thinner frosting. Then, beat on high for 5 more minutes. This will give your frosting the lightest, airiest texture imaginable.
